Breakfast Burritos for the Freezer are simple to make, requiring just basic pantry ingredients. Easy to make, simple to customize and perfect for busy mornings.

These freezer friendly breakfast burritos are such a great way to get prepared for a busy week! They are definitely a family favorite at our house. I used turkey sausage and added some hash browns - delicious!

This recipe is true to what I actually make in my real life kitchen given my restrictions (busy mornings) but there are additional things you could add that would make these frozen breakfast burritos - dare I say it - even better (bell pepper, sweet potatoes, green chiles, black beans). Whatever you decide to add to gussy it up/ make it your own, the things that I feel like make it so fantastic are the basic ingredients; scrambled eggs, cheese, sausage and the flour tortilla. 

The best piece of advice I could give you would be to make MORE breakfast burritos  than you probably want to. No matter how many you assemble, you will ultimately want more. When stored properly, a frozen burrito can hang in the fridge for months.  It's my life's work to convince you that there are more reasons - possibly hundreds of reasons - to keep breakfast meal prep recipes in your freezer. Number two, right behind weekday mornings are the worst, is everyone expects breakfast every. single. day. 

Depending on how much filling you're making and how full you stuff your burritos, this recipe may make more eggs and sausage than you need, but great news: extras will keep well in the fridge for a few days. It's good on whole wheat toast, good as a veggie scramble addition and good eaten straight from the bowl.

Ingredients

Ingredients for Breakfast Burritos for the Freezer. Eggs, sausage, cheese, tortillas.
  • breakfast sausage - select a ground breakfast sausage - spice level mild, medium, or hot depending on preference
  • eggs - choose size large eggs, 100% liquid egg whites may be substituted
  • cheese - thin sliced or shredded cheddar cheese is recommended
  • tortillas - select a 10" burrito sized flour tortilla wrap

Instructions

Step 1: Breakfast Burritos For The Freezer. Brown the sausage.

Breakfast Sausage: Heat a large skillet over medium heat. Add breakfast sausage. Use a wood spoon to break up large chunks. Cook until no longer pink, stirring frequently. Remove from heat and set aside.

Step 2 - Breakfast Burritos for the Freezer. Make the scrambled eggs.

Make Eggs: In a medium bowl, mix eggs salt and pepper. Coat non-stick pan and add egg mixture. Gently pull eggs across the pan with a spatula to form large curds. Cook until no liquid remains. Remove from heat and set aside.

Step 3: Breakfast Burritos For The Freezer. Add eggs, sausage and cheese and then wrap burrito.

Assemble Burritos: Lay out tortilla. Add cheese, eggs and sausage. Fold the sides into the center of the tortilla and then roll into a burrito. Wrap each burrito in a sheet of aluminum foil. Freeze assembled burritos in an airtight bag.

Step 4: Breakfast Burritos for the Freezer. Foil wrapped burritos ready for oven or microwave.

Heat Burritos: Breakfast burritos can be microwaved or heated in the oven. If using the oven, leave foil wrapper on and cook until warm. For the microwave, remove foil and wrap burrito in a damp paper towel. Microwave until warm.

Substitutions

  • Gluten- free - substitute store-bought gluten-free tortillas for flour tortillas
  • Breakfast sausage - turkey sausage can be used in place of traditional pork sausage
  • Vegetarian - the breakfast sausage can be replaced with a plant-based version to make this vegetarian

Variations

  • Spicy - add hot sauce, dip cooked burrito in salsa and/or swap in pepper jack cheese
  • Deluxe - add refried beans or black beans, extra veggies, cooked potatoes and dip in sour cream + salsa
  • Healthy - sub egg whites for whole eggs; use turkey sausage in place of traditional breakfast sausage; swap cheddar cheese for a low-fat option like baby cow cheese

Storage

To Store:

Once you have assembled breakfast burritos they should be wrapped in aluminum foil or parchment paper and transferred to an airtight container or bag. Properly stored freezer burritos can be kept in the freezer for up to 3 months.

Do not store freezer-friendly breakfast burritos in the refrigerator (even overnight) as they will become soggy.

To Reheat:

  • Microwave: Remove foil and wrap frozen burrito in a damp paper towel. Microwave on high for about 2 minutes, or until the filling is warmed through. For best results, use the oven, however ... for quick mornings, this is the heating method I use most often.
  • Oven: Heat oven to 400 degrees. Cook aluminum wrapped frozen burritos for 30-40 minutes or until the filling is warmed through. This method is best for taste (crispy tortilla), but isn't as convenient as using the microwave.

Top tip

Avoid assembling make-ahead freezer breakfast burritos until ALL ingredients have cooled to room temperature. Hot ingredients produce steam/moisture and can cause your burrito tortillas to become soggy.

FAQ

How do I avoid soggy tortillas when reheating the breakfast burritos?

To avoid soggy burritos, allow eggs and sausage to come to room temperature before assembling burritos. Avoid adding raw veggies - precook to release moisture. Finally, ensure that your sausage has been well drained.

Can you freeze breakfast burritos in parchment paper?

Yes. I recommend using parchment paper to wrap your burritos if you will be microwaving them and foil if you plan to reheat them in the oven.

What type of tortilla should I use for a freezer breakfast burrito?

Select a 10 inch, burrito sized flour tortilla. Avoid smaller tortillas as they will not be able to hold the filling well when wrapped into a burrito. Corn tortillas should be avoided as they crack easily.

How do you roll a burrito without tearing it?

Use fresh tortillas. Older tortillas that have been previously opened are dryer and tend to crack and split. If you only have older tortillas, wrap them in a moist paper towel and microwave them for 30 seconds so that they are warmed and have a little extra moisture. Avoid over-stuffing your breakfast burritos.

Do I have to freeze my breakfast burritos?

You do not. If you want to serve immediately, place foil wrapped burritos into an oven heated to 400 degrees for 15-20 minutes, or until cheese is melted and filling is warm in the center.

  • 1 lb. ground breakfast sausage 
  • 12 eggs
  • non stick spray
  • salt and pepper to taste
  • (8) thin slices of white cheddar cheese
  • (8 ) 10 inch flour tortillas 

Instructions

Cook Breakfast Sausage:

  1. Heat a large skillet over medium heat. Add breakfast sausage. Cook until meat is no longer pink, about 5-7 minutes. Stir frequently. Remove from heat and set aside.

Scrambled Eggs:

  1. Beat eggs, salt and pepper in a medium bowl until blended.
  2. Lightly coat a large nonstick skillet with olive oil spray. Pour in egg mixture. As eggs begin to set, gently pull the eggs across the pan with a spatula forming curds.
  3. Continue cooking - pulling, lifting and folding eggs - until thickened and no visible liquid egg remains. Don't stir constantly. Remove from heat. Set aside.

Assembly:

  1. Place 1 slice of cheese in the center of each tortilla. Add about ⅛ of the eggs and ⅛ of the sausage to the tortilla. Fold the sides into the  center of the tortilla and then roll into a burrito. 
  2. Carefully wrap the assembled burrito in aluminum foil. Store wrapped burritos in an airtight bag or container in the freezer for up to 3 months.

Notes

How To Heat and Serve (Oven): Heat  oven to 400 degrees. Place frozen, aluminum foil wrapped burritos onto a baking sheet and cook for 35-50 minutes or until the burrito filling is warm and the cheese is melted. 

How To Heat and Serve (Microwave): Remove the foil from the burrito. Wrap burrito in a damp paper towel  and microwave for about 2 minutes or until filling is warmed through. Cooking time will vary depending on the size of your burrito and your specific microwave.
